I don't claim to be a qualified nutritionist, just someone who loves good food and believes that everyone has a responsibility to look after their own health and body. I've learnt lots regarding nutrition through my own research and have come to the conclusion that on the whole, simple carbs are wasted calories. Unless you are training for a marathon or some other physical endurance test you don't really need carbs or sugar for energy. The body uses carbs and sugar for energy before it uses fat and so if you don't feed it theses things, it'll start using the fat instead.
Fat build up inside the arteries generally occurs when the fat is repairing the damage on an artery, this often happens when sugar 'tears' the artery. Without the sugar, the fat does not need to stick to the artery to repair it. Hence why its ok to not worry too much about eating more fat than most 'diets' allow.
The general rules
What you are not allowed:
Potatoes, Rice, Pasta, Noodles, Cous Cous, Wheat, Cereal, Bread.
Sugar of all kinds including sweetener. This includes fizzy drinks, dilute juice, chocolate, biscuits, cakes the list goes on and on!
What you are allowed that you may not realise:
Full fat yoghurts, milk, cheese.
Nuts and dried fruit (check for no added sugar)
Peanut butter - get a good one, I buy 'Whole Earth' as it just has peanuts, palm oil and a pinch of sea salt. Others have vegetable oil and added sugar, avoid these!
Fatty cuts of meat like bacon and mince.
Condiments - you can't avoid the sugar in condiments and avoiding condiments altogether is very hard!
